Thought I found a "smoking" deal (pun/no pun intended!) for butts at the local market at $1.19 per pound until I was reading post last night for $.99 a pound in multiple locations... Well, it's a good deal around here as most sale prices are at $1.49 per pound at best. They only had 2 out when I went in, and I thought yeah, I should by both (maybe I should have left one for the next guy? ahh.... next time), 1 10# butt is never going to be enough for 2 people, besides it's my sons birthday next week, and i think it makes a good gift (i'd love it if someone gave me a big pile of smoked meat for my birthday!)
Decided since it was 74* out, the smoker had to be used this weekend (little did I pay attention that it was going to be 32* when I started smoking) Yeah, thans snow on the ground and I was on my bike the day before without a jacket.... UGH
Refrigerate for a few hrs to soak in that flavor, in the Kamado around 11am at 252* and off we go. I think it's time for a bigger grill, 20# of pork really fills this up, i'm used to the dual 7#'ers from Sams and they fit easily.
Temp bumped up to around 275* for most of the cook, mopped with some soda, apple cider vinegar, some of my rub, lt brown sugar, and water.
Panned and wrapped at 169* around 8:30, Finished up around 10:30pm at 205* rested in the same pan in a cold oven for 2hrs and pulled at 12:30am... Yeah it was worth pulling pork until 2am to take this for a late night snack! The tub is bigger than it looks and the bags have almost a whole but between them for the B-day gift...
