Hi everyone, I'm a fan of offset smoker from China. My name is Feng, and I'm the owner of a resort in Chengdu, China. I fell in love with the local BBQ after a trip to Texas this year. When I return to Chengdu, I plan to make my own oven to make Texas BBQ, so that Chengdu people can taste this unparalleled BBQ. Because of some artistic obsession and limited funds, I wanted to try to make a brick and concrete oven, similar to a traditional bread kiln. But I also know that there will be some difficulties, such as ordinary bricks and concrete can not withstand more than 300 degrees of heat, which I plan to use fireproof bricks to accomplish. But my main concern is whether a brick-and-concrete oven can restore the flavor of the barbecue I ate in Texas. So I hope you can give me some advice, thank you very much.

Do a google search for BBQ restaurants in Lockhart Texas.
Kreuz market and Smitty's meats both use long rectangular "boxes" built with brick that use large metal lids.
These have an open fire at one end where wood is burned with the smoke entering at one and exiting at the other.
Not everone uses metal pipes, in fact what we call a "stick burner" is a relatively recent development.

Thank you, brother. You're my savior. Because Chinese BBQ culture is too scarce, I can't find any parameters. Thank you for your valuable information. I did a google search for BBQ restaurants in Lockhart Texas. Despite all the advertisements, I couldn't even find the picture of the stove. Later, I found related videos through youtube. Indeed, this kind of stove is the form I want. And now I have another problem that I need your help with. How do I find the structure diagram?

Here's a few examples but there's nothing I can find that offers plans for a large version like those used in the mentioned resturants.

Thank you very much for your help. It has helped me a lot. I searched for more than hours yesterday and only found some pictures of the block/cement smoker in the restaurant, but I didn't see any related design drawing. With this I can start by trying to build a small block/cement smoker for testing.
 
That's great, although pretty rare here in Texas.
We have peach trees but unless, like you, one has a ready source available, it's almost unheard of.
Peach is a hardwood and good for long slow cooks and it inparts a sweet flavor to the meat.
