And I'm getting all jittery!!! Yes I know I have a problem, and I know how to cure it.
So I now that I am back from vacation, still not unpacked (that's the nice thing about living somewhere cold and going somewhere warm, you can leave the warm weather clothes packed!!!), I can get ready for another smoke.
After work I cruised to Cash and Carry (for those on not on the left coast it's our restaurant wholesale place) in hopes of picking up a cyro pack of BSR's. They were out!!! They'll have more tomorrow and they will hold a nice one for me (benefit of shopping there a lot). I did pick up a few things for the freezer though. Pork BB were still on sale so picked up a three pack. Brisket was on sale ans well as Bottom round. So I quickly blew $100 and filled the freezer. Who's kidding the freezer was already full, now it's really full. So I took out the wings that were in there to make room. So that's what's for dinner tomorrow!
Saturday morning I'll cold smoke my Canadian Bacon in the morning along with cheesus because we are critically low on cheesus after the holiday blitz! I have decided that its good to go on long trips while brining, makes the brine time go faster. I guess the same could be said about smoking cheese too, smoke it then leave!
Saturday evening I'll smoke the BSR's on the mini-wsm and try out my possible entry for this months throwdown!
Sunday I'm going all in and making my first sausage! Pretty Simple Summer Sausage from Hi-MTN
I wanted to smoke on vacation, had I thought I would have shipped the Mini-WSM. There was plenty to smoke in the yard every day
There was this guy and his other 50 brothers
And Bessie could have made for some nice brisket!
