My name is Chuck, I'm from Austin, Texas - which many would claim as a "BBQ/Smoking" mecca. I own two Weber grills, and thus have never "smoked." Until I saw an episode during Food Network's "Grilling Week" by Alton Brown - where he touted a device that would allow you to use a Weber Kettle to cook "low and slow." The device, a "IQ BBQ Smoker" basically shuts off all the air inport panels of a Weber, except one, where you add the IQ device. You start a small fire on your charcoal, and the IQ device adds "just enough air to cook "low and slow." AND IT WORKS! I've done fish (as an experiment), peppers from my garden (can you say Chipoltles). and last weekend: TURKEY! At .99c per pound with 18 fabulous servings - how can you beat it?!? Comments, please.
