I have a nearly converted fridge and this is the first time running it . I have the humidity set at 80% but I am still getting case hardening. I just tossed some venison that I didn't trust now and I have done lonzino that is also getting dry....I am using an ink bird humidity controller as well as an outdoor weather station sensor as a secondary monitor. Temp is 58. I'm having no issues maintaining humidity but I don't understand how things are case hardening at 80% I did notice that I put the humidity sensor on the side of the fridge opposite the meat.... maybe that has something to do with it? Anyone have a suggestion?
