Huge meat transport... please help!

Hey all,

I got myself into making bbq for our family reunion Saturday. The issue is twofold. 1) The reunion is 8 hours away and 2) I have to smoke the meat (two pork butts) today due to timing issues. So what is my best option for transporting this meat? Should I smoke it and leave it whole (even slightly under cook it?) and shred it after I reheat it when I get there? Or is there a trick to keeping it tender and moist for 48 hours after shredding?? I’m desperate for some veteran advice. Thanks in advance!
 
Can you transport the smoker? A cooler can keep meat warm in the safe zone for about 4 hrs not 8 hrs. You could smoke at their place or smoke ahead of time, freeze in food saver bag, place in cooler to transport, and reheat in boiling water in food saver bag at their place.
 
DO NOT PARTIALLY COOK MEAT... Fully cook, zip bag it and immediately pack in ice.... reheat when you get there... you can add finishing sauce to the bag prior to reheating...

Pulled Pork is incredibly forgiving for reheating. Cook in advance, shred, package up, bring over on ice, chuck into a crockpot/slowcooker/what have you with sauce to reheat. If you can vacc seal and reheat in boiling water, even better.

I would not try to pull a reheated butt. Pull before you go, as other said, Pulled pork is pretty forgiving. Save some of the drippings to add back in it it gets a bit dry from the reheating.
 
Im with TomKnoll slow cooker is a good way to go or vacuum seal and boil in the vacuum seal after fully cook and shredding.

Probably old news at this point, but I'd smoke the butts, let them cool intact, pull it apart, package it in double Ziplock bags, or vacuum sealed, stick it in a freezer until partially frozen, then transport it on ice in a cooler. Reheat at your destination.

Trying to pull a previously cooked and cooled butt is a PITA... Pull while still warm.. 140F or higher... the warmer the better for ease in pulling...
 
Thanks y’all! I smoked em, pulled em, packed em, hopefully they’ll reheat well as they were fantastic when finished! I appreciate all of the responses!
