Welcome from the opposite of Florida. Minnesota that is. Did live in PBC back in the early 2000 then got the hell out. 🤣
Haha. Getting out is on my list of things to do. I want to live in winterland instead of a swamp. I see all these people doing cook videos complaining it's too cold outside or that it's snowing. I'll take too cold over sweating from stepping outside for 30 seconds to light my gas grill while also being attacked by mosquitos.

Welcome from a winter Florida resident (south Clermont). We retreat to Minnesota for the summer to escape the heat.

Winter sucks. Mosquitos up in the winterland make up for it in short summer months.

Forgot to mention: In December we are having a gathering for camping and cooking. search forum for 14th annual south Florida 2025 gathering. not exactly in SFlorida but out gatherings are a hoot.

Wife and I rent an RV for the weekend. Pricey but about the same cost as getting a motel for 3 nights.
 
Yes indeed. Can't say much about what we've done for NDA reasons, but we expect some relief on that front soon and to be able to talk more openly about our contributions!
I have an acquaintance that used to be one of our vendors who ended up moving to ETC in orlando who I know worked on epic universe. Excited to chat em up about it at infocomm.

Also, unrelated, put the deposit in on my shirley. Excited but wowza smokers are expensive now. I wish I got into this 5 years ago when people were getting them for 1/3rd the price. lol

Figured I'd throw some images in since I have a few days off work and im too lazy to start a new thread. lol

Made a smoked rack of lamb this evening for dinner with some green beans and gratin potato thingies (they're from wild fork lol)

Looks good. I am not a beef ribs fan, but we love lamb and ribs is on the short list.

Those are mighty fine looking cooks. Fueling Around Fueling Around is right though. I'm separate threads people could ask more questions. I have only done lamb once. Wasn't a fan. Not sure if it was because of the cook or spices? What did you do?

Honestly I have oral allergy syndrome so I keep most of my seasonings pretty simple because some things give me an itchy throat (grew up thinking apples and bananas were spicy lmao)

For the lamb I did pepper, salt, lawrys, and some rosemary and thyme. Smoked it on my pellet grill with a tube at like 190 until 135, and then took it off and threw it on the gas grill to get something going on the fat side.

What kind of lamb did you do? I did a leg of lamb roast a week or two ago and it was fine but a little too lamby. I grew up liking lamb chops and it's cheaper to buy them as a whole rack and then I can smoke it and eat them standing over the sink like a normal man.

I think I just had a leg. Was a random buy that most people were kinda like it's ok but I don't need seconds. My cousin finished it, then again he finishes everything🤣. Maybe I over seasoned it. Maybe a simple Greek seasoning. Maybe just SPG.

Yeah leg is kinda lamby. There's also a gland in there that needs to be removed or it gets even lambier

Well thank you sir. I will say I played a relatively significant role in one attraction out there.

I am generally always a bit hesitant to take too much credit as even in just the attraction I was involved with there are hundreds of people that have put in effort, and a good many of those with significant roles. Zooming out to the entire park, it's thousands of folks putting in millions of hours of effort. I try to give more credit to others than I take myself, good rule in life I think.

Quite proud of what we put out, and glad the world is enjoying it.

Haha. I liked that this became the infocomm theme park thread.

Infocomm was kinda meh this year. No good swag :(

Just LED walls and interactive whiteboards.
 
Lamb looks good.

Lamb is at the top of my list for smoking and I've done a lot of it and can't get enough of it.

I didn't even wind up going to the show and I live 15 min from the convention center, and work 7 minutes from the convention center.

Saw a photo on the Wednesday on LinkedIn of someone, and the Digital Projection booth was in the background. And it was the same booth they've been using for at least 10 years, and at that point I said, I think I'm good lol.
