How much heat will probe wires withstand?

On my new Maverick ET-7 dual probe I was planning on just taking the probes threw the smoke stacks on all my smokers... in most cases it will reach the meat and I'll just rig something right outside the stack for it to sit on.

It will never be near the firebox and really only get as hot as the smoker itself but is over 300* too hot for these therm wires??
 
You'll be OK with doing this. The only time I ruined a probe was when I had a raging fire in the offset and the probe was right next to the firebox.

They will never get close to the fire doing it this way. That's my way of keeping it 'me-idiot-proof'...

Good luck. I find that now matter how hard I try to do that I keep finding a new way to out idiot myself.
