They look good
Sounds like an awesome event. The meat looks delicious.
Thanks, hopefully they have a good smoke ring. I changed it up a bit. We had an ash tree cut at church so I loaded up some. It burns fast but the smoke is good. I also used some apple, pecan and the old stand by red oak.

Seriously, if anyone is reading this in the Chattanooga, TN or NW GA area you are invited to attend. It is at Shiloh Baptist 24 Kay St, Rossville GA at 5:30 on 2/20. The event is for men and young men only and it's free of charge. If I'm not supposed to post this please let me know and I'll take it down.

Here are some of the sliced and cubed shots.

Looks amazing! Very well done and very cool cook you are doing.

Thanks, it has been a labor of love. I made the right choice by biting it off in chunks (no pun)

I’m looking forward to seeing how many this fed. If you run out, just look for a kid with 5 loaves and 2 fish.

I'll be sure to let you know, if we run out then there will have been more than we ever had and God is Good. That kid will be there...lol

Ringer Ringer Thats lookin good man, great job! If at some point it looks like you may be running low you can always chop it up, mix in a little BBQ sauce and start serving it that way. This allows more of the fatty, extra crispy, and all the sliced bits to be used up without lowering the quality of the bite. Stretches things a long way and it's how I see it served most of the time at big gatherings in TX like your church event.
It also happens to be the way I have come to enjoy my brisket the most!

Best of luck!
