How much brisket to feed 100 guys

We are getting ready to host another men's event at church and I'm thinking about smoking brisket this go around. I'm leaning towards 75 lbs of uncooked brisket. What do you guys think? With sides and dessert is this enough brisket to get 100 guys full?

Ive never cooked brisket for that many. But I would say your on track. I was thinking 1lb pre-cooked for full grown men. But depends on what the sides will consist of.

Figure a half pound cooked meat per person. (And you may need a person serving so they don’t get greedy) Brisket cooks down to 50~60% depending on how much fat. So 75 pounds is the bottom end for a single meat meal.
 
I'm always on the cautious side and never do I want to come up short feeding people.
If the brisket is going to be the only entree, then yeah a 1/2lb portion is good.
Therefore I'd be looking at 60% shrinkage after trimming and cooking.
Then further allowing for extra people to show up, people to be greedy and get seconds, plates to be dropped and such.
I'd be looking at buying about 150lbs of untrimmed briskets.
150lbs-90lbs(60%)=60lbsx2=120 1/2lb servings.

If there will be other entrees and multiple sides you could reasonably allow for 1/4lb servings, as long as there is portion control during plating.
 
I may add in some smoked sausage just to stretch it a bit. Sides will be slaw, beans, maybe a potato salad, a nanner pudding and some pies and cakes.

I always have a couple of butts on standby too. Everything else seems to get looked over if brisket is on the board though.

Add some chicken quarters in there and you can cut that brisket way back. 2 meat meals are less expensive to produce, if that is a concern? Otherwise, about 100# of choice brisket will work, the prime will require just a bit more as a stand alone meat.
 
Thanks guys, I may add some meats in just for variety. Some people just don't like brisket (I don't know who they are). I'll probably throw a mixed tray out there. Cost isn't really a huge issue but I do need to be a good steward of the funds for sure.

The more the merrier! We have a quarterly man church service. It's geared just for the men and boys of the church. Come on, I'll save ya a seat.

I favor more of ~50% yield, and I round up 1 brisket for insurance. 100 guys = 100 pounds of raw brisket. I like to cook 14 or 15 pound briskets, so I would buy a minimum of 8. If the crowd is younger and there will be some drinking, 9 might be a better guess.

Best tip is to have 2 guys slicing and plating at the END of the line.
 
I agree on 100 lbs of uncooked brisket since u will only get about 50% yield.

Also in TX weem to usually get chopped brisket instead of sliced brisket on these occasions because it goes a longer way and you can mix in crispier or fatter or more pieces where with sliced some of that goes to waste.

I also agree with serving people to control sizes AND pro tip, give everyone like 3 slices of bread or even 4 and they will be plenty full :)

6oz-8oz should do the trick no problem with the bread and sides and desserts and more of he bread :D

Here is an excel spread sheet I found and have posted before on the Forum that might be of help. Please, post pictures of your brisket and the set up Ya'll used. I am always interested in seeing how others setup their "kitchen". 🍻
