Thanks, hopefully they have a good smoke ring. I changed it up a bit. We had an ash tree cut at church so I loaded up some. It burns fast but the smoke is good. I also used some apple, pecan and the old stand by red oak.Sounds like an awesome event. The meat looks delicious.

Ringer Thats lookin good man, great job! If at some point it looks like you may be running low you can always chop it up, mix in a little BBQ sauce and start serving it that way. This allows more of the fatty, extra crispy, and all the sliced bits to be used up without lowering the quality of the bite. Stretches things a long way and it's how I see it served most of the time at big gatherings in TX like your church event.
It also happens to be the way I have come to enjoy my brisket the most!
