Couple of quick ones for ya:

Got myself a shiny new 22'' WSM waiting for me at home when i return from work overseas. I believe there are 2 ccoking grates , 1 upper and 1 lower. How many full slabs of baby backs could i expect to fit on the top grate keeping the bottom grate free for ABT's?

Am i better cooking the slabs on the flat meat side up or is it perfectly okay to use a rib rack? Only problem i see with the rib rack is when i come to foil..

Any info appreciated

Actually foiling and putting back in a rack isn't all that bad.  I have done it most times and I premeasure my foil and have it ready.  So when it comes time to take all the ribs off to foil it is quick and they don't lose a lot of heat.  As for how many I am not sure  I would think 3 maybe 4 but I don't have a WSM to check it against.
 
You can get 3 whole racks on the top grate......If you get a couple rib racks you could probably put 6 up there pretty easy. No need to foil....put them on, keep the lid closed, keep the smoker @ 225 or so and check them 5 hours later. Pick them up in the middle and when they bend in half they should be ready.

Let me give you one pointer for using the vents on the WSM. After I get the coals going I shut 2 of the vents and control the temp with just 1. Usually 2 vents closed and one vent about 1/3 open keeps everything right where it needs to be.....It works a little different in the wind but you can still do it. These settings seem to maximize charcoal life also......

Okay cheers for that guys - guess i'll pick up another rib rack and get my 6 up top that way and just give the foiling a miss..
Damon I hope you didn't put them 3 racks on just to show me how they fit....:biggrin:
