I bought a 16 lb USDA Prime Brisket the day before Christmas Eve at Costco. Plan was to let it wet age 21 days and cook it. I'm not gong to get to it this weekend. How long can I wet age an cryovaced brisket without it gong bad?

The briskets at the Costco I visit are usually packaged 3-4 days after they are processed.

I am not quite sure what you mean by wet aging but when I buy a brisket it is cryovaced and I leave at is in thr frig for 40 days turning daily. Tenderest brisket you can get.

that's what i mean about wet aging. I have not been turning daily, but guessing I should be gooed gor another couple weeks.

Can I ask the purpose for turning daily?

Th3 fluid that collects on the bottom side gets a chance to be on top and therefore gets a chance to redistribute thru the brisket each time you turn it.
