How fresh is your pork?

I really want to skip work and follow this guy.
The pork still has it's oink!
Don't get any fresher than that.

Scald/Scrape vs Burn/Wash, or just skin that sucker out?
Man I luv cracklins, but scalding is serious work.
I’ve done all three of those options, but I’m wondering how the burn and wash would go with a Hotsy hot water pressure washer. Seems like you could just wash that scale layer off. I’ve never done that with a Hotsy, might work though.

The problem with burn/wash is it leaves hair stubble in the skin.
If the Hotsy will maintain temps between 140°-165° you might as well scrape.
