how does the throwdown thing work?

I was wondering how do you get in on a throwdown? I would love to give it a shot

Each month here on SMF they pick a certain menu item and have a throwdown (competition)  then we submit our own dishes that we have made for the judges to judge. Then the whole website gets to look at the dishes and we can vote on a winner. That's a throwdown and they are fun and you can make anything that you want to as long as it is smoked and has the main ingredient in the dish. usually a sponsor will donate a prize. There's a voters prize and a judges prize.

So when do you sign up to do them? And how long do you know in advance before you have to 'turn in'?

You don't sign up. There will be a anouncment of a throwdown with instructions of turn in and an end date. You will submit your entry to a event coordinator and they will post it in a voting poll
