Boy what a title....LOL

I smoked the ribs and then wrapped 'em and brought them to the oven to finish. I know, I know, it looks burnt but I assure you they are not. After an hour in the foil, I opened 'em applied the peach glaze which is when I should have also applied the honey but I applied the honey after I had seasoned them. So it got a double whammy of heat. The dark is not burnt anyway.

I wish I had a better camera because the color on the ribs is amazing. I cooked this about 15 mins. too long. They are not dry but they just almost fall off the bone as evidenced by the shot where the end piece broke off with just a hint of pressure.

Even though I lack my choppers, I still like a little bite on my rib meat. I did a 2/1/189 degrees.

Peach glaze I still love on pork, but truely the honey was just too sweet. Its that good fresh Texas honey. My Pop always just rubbed S & P and mopped with vinegar & butter. I don't know why I keep trying to do better but I just gotta, its in the blood!

Everything is sticky including me, but I am not above licking my fingers over and over.... LOL

Ribs look great Kevin, I like the idea of a peach glaze.

Point for sure

I have been doing peach glaze for awhile. I make loads of fresh peach freezer jelly and I mean, how much toast can you eat? LOL.... its great on pork. but I doubt I do another honey straight on the ribs. I have done honey mustard and it worked. <shrugs> just gonna have to work some more on it.

Looks like it should be fantastic,I never tried eating without my plastic teeth. LIKES
