Homemade Ukrainian sausage

2kg pork butt
500g fatback
2 medium garlic heads
3 large bay leafs
30g salt
1 1/2 tsp black peppercorns
6 large allspice

Cut pork and fat into half inch cubes.
Mix together all spices, salt and garlic in mortar or processor. Add to cubed meat.
Mix well,10min by hands or 3-5 min in mixer.
Stuff into casing.
You can fry these, smoke, grill or bake like i did.
Place into baking dish with a little water at the bottom of the dish and bake at 360f for about 40-45 min
Dont forget to poke holes with toothpick before cooking.

Looks good and nicely stuffed. Only small cubes and mix, no grinding?? Interesting.

Nothing beats fresh home made sausage!!!
 
Looks great. Reminds me of a sausage I had in Krakowie.

Cubed and stuffed, not ground.
 
These look great! Nice work.
I make a couple different sausages close to this but I only cube lean meat and I use about 1/3 of fat/fatty meat that I grind on the fine plate. Mine are also cured first then stuffed. Good stuff.
 
Here is the same recipe, but with addition of cure#1.
It was smoked 4 hours at 140F with apple chips. And finished vacuumed, in sous vide, at 176F till internal 158F.
