So been wanting to make my own chipotle Powder for a while but without a smoker that i could keep at a low temp its kind of hard to do. Feet Farm had the MES 30 on sale for $160. Couldnt pass that up for bacon and sausage.
Went a got 3 lbs of green japs and cut them in half and scooped out the seeds. Left as much of the white as a could to keep the heat up. No pick of this sorry.
Then went into the smoker at 150 witht the AMZN for 12 hours. Then into the oven as low as it would go. Around 170ish for another 5 hours. At that point they where totally dry and look like this.
Its crazy that these where once green peppers :)
Then i put them through the spice grinder for a bit and then strained out the few little chunks and this is whats left. This is about 2/3 of the total as i was not done grinding. One thing to note. Do this outside if you can. I did it in are kitchen and had the wife and me hacking for about 20 mins. Though it would clear up any congestion easily :)
As far as flavior I am very happy with it. Tried some straight and it starts off very smoker and earthy tasting and then the heat starts to build to a decent level. Not going to set your mouth on fire but enough to give something a good kick.
