Well for the first time in many years, I am home from work for the wife's b'day. I work in the oil industry so time off is sporadic at best, sometimes I will go many weeks to 3 months away at a time. So being home in January is not a norm for us.
I took the time to spoil her this yr, I picked up a prime rib roast, Salt, Pepper and a little garlic, Put it in the smoker. I also picked up some lobster tails and some veggies. Cut up the veg, zucchini, peppers, onion, cherry tomatoes, broccoli and cauliflower. Tossed with some EVOO salt and pepper put in an aluminium pan and into the smoker, then the Lobster tails with a bowl of butter. smoked everything until Prime was at 125, pulled and sliced into steaks and then a quick sear. veggies were just soft but firm, Perfect for us and with that beautiful smoke flavor to them. Pulled the bowl of butter that had started to melt that took on the smoke with the tails... mmmmm mmmmm it was a huge hit for everyone that was here for it. The wife was skeptical of having everything smoked...... Well she loved it the most so good for me.....
