Here's my ham I did for T-Day. I used my usual brine and pickle pump.
I usually use a shoulder, but I decided to go with a boston this time.

Diluted mustard and spice rub. (I think diluting it causes it penetrate the meat better)





Smoked with hickory to 160° It was still so tender I could barely cut it without it falling apart!







It was a big hit for T-Day, No Leftovers!

BTW the reason I call it a cheater ham because it's not from the rump end to make ham it's from the shoulder end to make ham.

Nothing to do with processing it tastes wonderful! I use them because butts are cheaper and I can buy them anytime - real hams well that more than I want to pay and these are just as good. Did that make sense?

My son acctually dubbed them cheater hams when he was a kid. He used to whine and say "everone else gets to eat real spriral hams we only get cheater hams!" He didn't understand as a kid I just didn't didn't have the money for a fancy ham so I cheated - butts are cheap!
