Hello everyone. It’s been awhile since I posted anything. It’s been a crazy year since finishing Holy Smoker. From getting flooded last summer to cooking a ton of good food. Anyways I am gonna be going to a local competition in June and the smoker is going with me also. I am in the process of building a winch mount on my trailer to help load this beast. I am gonna enter into the ribs and pulled pork category for the comp. I will add a few pics below from the flood, mount build, and some practice food. The pic with the flood water was actually another foot higher this was several hours after it had started to go down. So enjoy hope everyone is have a great start to the summer. I will try to post more now that things should be slowing down and I will definitely update after the comp. I guess I didn’t get and finished pics of the pork last Saturday but it was really good for my first hot and fast.

I irvin78787884 ... Sounds like a fun time coming up... I've done quite a few comps myself... The best advice I can give...

"Don't stress it" .... Treat it just like another cook maybe paying a little more attention to detail.. Relax and have fun... Learn everything you can by talking to others ...

First off , good luck in the competition.

Wow that is some flood, much damage to your buildings, ribs look great.

It cost my $4600 to repair the house. Insulation heating duct work and vapor barrier all needed replaced. Thanks also I hope I do half decent and the ribs were on point.

Thanks that is certainly my plan. You never stop learning that for sure. I am excited about it more than stressing. I am sure that will change on the day of lol.
 
I did find a video I took of pulling the bones out of the butts so I took a screen shot of the one.

Don't know anything about the comp and/or the judging/judges ... We had a guy that was a judge at a comp and he was hanging around our pits as we were offering libations and asking questions... He was telling us that they (judges) frown on a brisket or a butt that has gone nekkid to completion in a stick burner ... To smokey ...

I have never been to it. It’s a local gig. That the fire company put in In conjunction with a place that does fireplace installs and backyard kitchens ect… and sells all kinds of smoker stuff. Proceeds got to the fire company. We have 5hrs to cook the food and present. Well I should say that’s when the food tasting can start. It’s people’s choice voting also. So the judges are the guest. So it’s a comp but not a true bbq comp in the respects that it doesn’t have 3 or 4 judges only. I have been told by several people that have been to it in the past. My smoker will be the only one like it as far as stick burner. Sounds like they all are pellets smokers. So we will see what happens for sure.
