Holiday gifts in the making

Smoked 20 pounds of x-sharp cheddar today for Christmas giving. Used a blend of apple and pecan pellets. 3-1/2. hours.

Going to vac seal. Planning on letting a couple pounds go for 5-6 years. The longest I've done so far is 3 years before I broke down and ate it. Tasted great.
