Has anyone tried smoking hog jowl? That is our traditional meat for new years and I would like to kick it up a notch. Any ideas?

That sounds good however I am new to a lot of this. Not ready to try curing but bacon is on my list of things I want to learn. I was thinking more like treating it like a butt or maybe making burnt ends

There are many ways and recipes for curing meat you will just have to find one you like. Mine goes way back to dry curing by my grandparents. Pops brine is very popular on here.

Thanks for all the replies. It's obvious I have a lot to learn. I'm looking forward to the education.
