That sounds good however I am new to a lot of this. Not ready to try curing but bacon is on my list of things I want to learn. I was thinking more like treating it like a butt or maybe making burnt ends
Cured or uncured, smoked hog jowls are freaking awesome.
Holly and Halfsmoked have it right, beans and greens, goes together with hog jowl like biscuits and jam.
There are many ways and recipes for curing meat you will just have to find one you like. Mine goes way back to dry curing by my grandparents. Pops brine is very popular on here.
