The last UDS I had I primarily did low and slow cooks. I decided that I wanted to do the Xmass turkey on the UDS this year and I want to smoke it at 325-350. So I figured I better doña test run to make sure I could keep the temps. The boys wanted ribs so I pulled a rack of spares out of the freezer. Didn't so any trimming just removed the membrane and seasoned. No foil no spritz no sauce!
