There's actually better stuff called RTV. It is high temp silicone used for making gaskets in automotive. You can find it fairly cheap in an auto parts store, or for that matter, wally-world has it as well. Look for the red stuff.
 
Hardware store carries hi heat caulk, about the same as Josh mentioned, used around fireplaces. Works great and no nasties as it cures solid!

I use a high heat rtv silicone that I get at Menards, it is in the fireplace and stove supplies. I dont have a bottle in front of me but it even says... approved by beef and poultry ***. or something to that effect.
I holds up great!!!
 
I use standard kitchen and bath silicone. It is rated to around 600-700 degrees on the tube IIRC. It holds up very well. My first refer smoker had about 15 years on it and no problems where I used it.
 
We use GE high temp RED RTV (Room Temperature Vulcanizer) on our airplanes in hot areas. It hold up very well and has no VOC problems. Should be fine in a smoker.
