Hi everybody! New to the world of smoking and stuffing. I've always wanted to give this a try since I really enjoy cooking. So after a couple months of buying what I think I need to give it a go. I'm going to try my hand at it next week. Bratwurst, first fresh. Then I'm going to try my hand at smoking.So far I've purchased a Nesco 3/4hp grinder. Single speed with reverse. A Lem wanna be vertical stuffer. Great reviews on this unit. And cheaper. A Masterbuilt sportsmen gas smoker. Spices, bowls, chips, hog casings, etc,etc. I'm going to be off from work for most of next week while my wife goes in for surgery. So, I'll have some free time to give this a go. Anyway, I'm glad I found this site. Looks very informative!
 
Hey, Welcome! Fairly new as well, about this time last year. Have learned alot from the guys here. Nice smoker. i live in Northern Canada, far away from easy access to hard woods as fuel. I have the Masterbuilt Pro dual fuel smoker (have only used propane.) If I can make a suggestion (if you havent done this already) get a cast iron pan for your wood chunks/chips. Makes a huge difference, and they dont burn off as quickly. If you need any help, be sure to ask!

Thanks everybody! I have many hobbies already. And the wife just rolled her eyes when I said I wanted to give this a try. But, I have a great wife. And she knows my love of cooking. And I'm not half bad at it. We'll see next week if I can do this. I figured I would start this with making Brats since she is a German born and raised. I met her while I was overseas Been married 31 years. Together for 35. So she knows my quirks. Hopefully a batch of curry wurst will win a smile. Especially after she gets home after surgery next week.
