Hello all, stumbled upon the site whilst searching the web for reassurance the planed smoke shack would not burst into flames!!! Resource and supplies are very thin on the ground here in UK. Very envious of you guys state side, as you have a rich culture and history of smoking and home meat processing. So I,m looking to build a smoke shack using t and g, using a double electric hot plate kindly surrendered by my Dad! I think I have most of the info I need but still have concerns regarding internal temps. Would mostly be trying smoked sausage, jerky, snack sticks. Quite a keen English Banger maker but would love to try polish, American smoked sausage. Been doing jerky in the oven, way too tasty, but would like to try cure and smoke method. Again jealous of you guys in USA as jerky and snacking sticks seasonings are available here as imports with huge postal cost. So hoping to find some home recipes on here. Along with informative ideas regarding my smoke shack build. Doing lots of reading on the various posts on here at the moment and very excited about venturing into the world of smoking! Wish I was a bit more business minded as I'm sure this smoking/processing/BBQ thing will be huge in ten years in the UK.

Is there much interested in smoked\bbq foods in England?

BBQ and smoking is not at all mainstream in UK. BBQ as we know it is what you guys would call "grilling". We have a rich history of smoking, but it is mostly "Cold Smoke" and usually with fish. Bacon is also popular smoked. We have just started to see an up turn in smoking machines and drum smokers in recent years. But you guys are decades ahead of us, in technique and methods. I feel sure it will become more popular in UK over time though.

 Hope to start the smoke shack soon...And yes I will do Pictures......But bare with me...lots of interesting research to do on this site first!!!!

Quick question...."JERKY GUNS"......Worth the investment or stick to full muscle jerky?...
