Hey guys, I've read the forum for a while for tips, tricks, recipes etc. I finally decided to join to start sharing my own experiences. I'm a big time hunter/angler and make pretty much everything I possibly can from the game I harvest. Glad to officially be here! My latest smoke was about 18 pounds of some hi mountain venison snack sticks (the hunters blend variety). The sticks turned out great, just needed a little more zing to them. Next time I'll probably add some extra of the seasoning and a little of my own flavor to boost them up. Currently I use a Bradley smoker or my Weber kettle. I am going to get a propane smoker soon as when doing summer sausage or snack sticks my Bradley's height isn't exactly convenient for big batches.
