Hello everyone new here from Canada,
Just bought myself an oklahoma joe highlander.Burn in done,seasoning done.
Now im going to cook for the first time,everything is fine except whenever i add wood to the coals,she smokes like crazy.Wont that oversmoke my food?
 
Thanks guys,
I start off full open damper and full open stack untill i get to 250 and nice blue smoke.
But when i add more wood it just smokes like crazy for 20 minutes
 
im certain somone on here will chime in with the same smoker....perhaps adding smaller amounts of wood may help?i dunno lol i burn sawdust[emoji]128515[/emoji]lottsa great info here !
 
Are you sure the wood you're burning is fully dried?  As well, if it doesn't mess with your temps too much, open up the vents when adding wood.  BTW  how did today's cook turn out?

Yup dry as a bone.im only using fist size chunks of hickory and it seems to billow white smoke longer than it should be.
