Hi everyone,

I've just started smoking with my CampChef 18" Smoke Vault propane smoker. I've had one smoking session so far (with pretty decent success), and I'm about to tackle Turkey day! I've got the bird in the brine and I'm ready to go with the smoker tomorrow. I'll be using Apple wood for smoke and apple juice in the water pan.

I look forward to smoking loads o' meat in the future! I'm also open to any input from the group!

Take care!

Welcome to SMF! Good luck on your smoke tomorrow. How big is your bird and what time are you getting started?

If you have any questions, be sure and ask. The folks here are always ready and willing to help out.

Glad to have you on board.

Thanks! Glad to be here.

I'm actually smoking two birds... one 10# and one 11#.

My plan was to begin at noon for a 7 o'clock dinner.

How does that sound?
