Newly relocated to South Carolina from Florida.  Meat smoking is serious business in the Carolinas, so I'm stepping up my game.  Just semi-retired my vertical charcoal smoker for a 30" MES.  I have a small turkey lined up for Christmas day and a BB for the next.  I'm not a novice at smoking, but, judging by the amount of info available here on the forum, I have a lot to learn (and looking forward to it).

Welcome from Louisiana. You will find a wealth of knowledge here from members who are happy to share it. Don't hesitate to ask questions and take advantage of the search bar.
