Wow that meal looks fantastic! Got some great color on ribs and hens. They're fun to cook, like you said...everyone gets their own little bird. I think the last time we did them was on a spit over an open fire. Congrats on the ride

Picked up some Cornish hens to smoke Sunday. Realized I had 1 rack of baby backs in the freezer so figured I would do that as well. Really wanted some BBQ this weekend so the only thing I made to go with it was some sweet potatoes.

Started with rubing the hens and ribs. They all got salt and pepper. Then the ribs got some sweet chilli rub and the hens got a little webber original. With smoking these at the same time I didnt try and go for crispy skin on the hens. I was looking for bite through skin and fall of the bone. This way also alows the kids to easily eat the chicken off the bone.View attachment 434450View attachment 434451View attachment 434452View attachment 434453View attachment 434454

Then into the smoker. It was running in the 275° range.
After a while they took on some good color.View attachment 434455

I wrapped the ribs with a little butter and a slash of apple juice. Put a foil cover over the hens to get them fall apart. In the meantime I picked out some sauce to glaze with after they came out of the wrap. Went with franks sweet chilli for the ribs and a couple of Carolina sauces for the hensView attachment 434456View attachment 434457

Out of the smoker and unwrappedView attachment 434458View attachment 434459

I put a rack over the pan the hens were in and brushed on the sauces . then back into the smoker for a little whileView attachment 434460View attachment 434461

Out of the smoker resting for a few minutesView attachment 434462View attachment 434463

Ribs cut up . then onto the plate. Ribs, hen and sweet potatoes.View attachment 434464View attachment 434465

Turned out pretty good. I really liked the sweet chilli glaze on the ribs. Almost turned into a candy like sticky crust.View attachment 434466

Thanks for taking a look!
I too am a fan of a sweet rib. Nice job.

It all looks awesome. We like the Weber seasonings as well as the Heinz BBQ sauces. Great post and good looking food.

Thanks! Those Heinze sauces are pretty good. They are my go to for most things.
