So I typically get my meats from Costco or the local grocery store, with the occasional visit to a meat market.

My question is this: I am looking to get half a pig or perhaps half a cow. Does anyone here have experience in using a local butcher for this? My buddy got half a pig and his meats were not cut as expected for smoking. The hams and pork butts were rectangular.

Any help for finding a guy to do this in the Milwaukee area would be great, if they are within 50 miles that's fine too.
