ok i put my brisket on at 3:45pm.... and at 9:25pm the alarm was going off at 170 degrees ps it's only 7lbs.. thats only about 5 1/2 cooking time .. at 1.5 hours per lbs i should be looking at the half way point... my temp has been at 185 - 210 degrees pretty consistantly
all this being said iguess i am just wondering is it ready or should i watch the temp and let it keep on, keeping on..
 
After about 20 min the temp started to drop .. all the way to 160* then over the next 5 hours rose to 172* pulled it and here she is ,, (sorry i've eaten bout half.)
this is my 5th one .. 2,3,and 4 were done at the cabin feeding family .. funny no one complained.. but i think this is the best of each attempt...

Some times that happens. Looks like it turned out pretty good. You just gotta keep the faith that it's all good - AND it's done when it's done. Next time you're unsure of the temp try checking another spot to make sure.

that is what i went in to get was the other temp. gauge.. and when i got back is was dropping... o'well it was more bud time....
it is good .. fat cap may have a tad thick..
