We have a electric Masterbuilt Sportsman elite fdom cabalas. My question is, how com when i smoke chicken (temp 250) the chicken skin gets very hard and rubbery. I brined the chicken and made sure to dry it really good?
 
If you want crispy skin you have to smoke the chicken at 325 or higher.

Or pull it off the smoker when the IT hits about 150 & finish it on a hot grill or in the oven.
