Help me with beef ribs

my wife bought these beef ribs, but these aren't the beef ribs i have seen before, these are like small chunks.  Anybody done these before?

Now I am going to take a wild guess them aint Choice Grade and might be a bit chewy but here is a like which purports to show how to cook them things. I think we made soup out of em back in the good old days Let us know how you done them and how they turned out. Thanks.
