i usually make 25 lbs of kielbasa with pork fat, garlic, marjoram, cure, and venison. This is used for lots of meals: steamed with rice, sliced in soups, diced in beans, in a skillet with peppers and onions, on a Kabob etc...

I’m considering a new “staple” sausage this year. I’ve been thinking about beef fat instead of pork but I’m not sure. Anybody got any suggestions and of course recipes to go along with them :-)
 
Andouille? I don't know, it's hard to think of something as versatile as kielbasa, unless you make a bunch of knockwurst.
 
Do a search for Venison Sausage and Beef Sausage, like Texas Hot Links and Lockhart Style Sausage. The result will be limited. There is pretty much a 100 to 1 Pork based sausage vs Beef based sausage recipes out there...JJ
 
One of our make every yr sausages is smokies stuffed with some kind of cheese. Last batch we used Tillamook pepper jack. They are some of the favorite ones we have done. We make 200+ pounds a yr. with our game, always pick a new kind every yr. and do our favorites as well.
