im absessed with beef ribs.. but I can’t find a store or website that sells those big 7 inch plate ribs.. any ideas??
 
Nope. I told my butcher I wanted beef ribs. Got these.

Not sure about your local super market, but here in St. Louis they tend to cut them down to something more like what c farmer shows and call them short ribs. Almost never sell the full length ones. I did the math on a pack of them, and it worked out to about $5 per bone. It was a while back but I think it came to about $25 per pack. That's alot of money for so much bone. Now it's getting past the soup and stew season and we might not even carry them again til fall.
I can't sell individual ribs unless a meatcutter is there. I'm not allowed to use the saw and once opened, we cannot wrap and put back. It must be processed for sale immediately. Just company policy. Understandably it is a relatively slow seller and he will be hesitant to cut into a new bag if the shelf is full of fresh cut short ribs.
If your local grocer cuts in-house and has the short ribs like c farmer posted, he has the plate ribs to make them from. You may have to buy the whole pack or if you can catch him on the day he has to cut them, he can package one or two for you before he cuts the whole pack. Just don't get buyers remorse and drop them elsewhere in the store or in the case you order them don't forget to pick them up promptly. If he feels you screwed him, it WILL be the last time. yeah, I been there done that.
 
Most butcher shops these days are not carving up half sides of beef in the back. They get pieces like most stores. Them “bronto” ribs your talking about are a lot more common in Texas, and Oklahoma than they are in the Midwest or east coast. Find a butcher who is separating half sides of beef and you’ll get your bronto ribs, but they’ll be pricey.

I’m here in N.J. all I can get are those punny short ribs with more membrane that meat.. I need some Dino bones but I won’t give snake river $250 a plate I don’t need Waugh help!!,
 
Look for a small butcher shop that process beef for the local farmers and has a retail outlet and ask them if they will save you some. A lot of them are buying local beef for there o

Own retail. Just tell them what you are looking for. You may have to get away from the tall building of the big city to find one.

The only time we see them is after a holiday like Christmas. Sure wish they off them more often.

L, No good beef ribs around here either.It is like smoking a bone with meat scraps when I try the beef ribs in this area.
 
I have pretty good beef ribs at wally world. the are short plate ribs not the big 7 inch ones you are talking about but they are good meaty ribs. here is a pic of what i get. i pay about 6.88/# for them.

I can also get the beef back ribs which are OK and i smoke them for a snack because they are cheap 5-6 bucks for 2 racks but i dont like them as much as the plate ribs


I hope you can find those big dino ribs but if you want some decent ones try your local Wal-mart.

I'm in Milltown about 3 hours north of you. I did a Google search for you, put in butcher shop portage WI. You have 2 in Rio. Johnson sausage shop Mark's meats. And Lodi meats in Lodi. Try one of those and see what you can find, if nothing else it will give you a nice road trip on a Saturday morning to try there sausage Lodi has won a bunch of awards.

PA, I have been to all of the meat markets in this area. Johnson's is ok, expensive and won't do custom cuts. Mark's is pretty good prices aren't too bad but the counter help know nothing about meat, they just sell the meat. If you want to talk to a meat cutter you have to catch them at the right moment and I haven't been able to catch one. Lodi I haven't been there for a while and am going to visit again soo. Other than those The Meat Market in Baraboo is good and will work with you but it is not cheap, ie, expensive.
