Help:got a venison tenderloin, now what?

i just got a small tenderloin, says "Venison - Inner tenderloin" on pkg.

it might be 1 1/2 pounds...what do i do with it?

any sugguestions?

If you'd like to smoke it, I suggest a partial bacon wrap over a light rub. Or they are really good just cut maybe 3/4 inch thick, salt pepper drege in flour and fried in butter. Either case you want to keep it round 140-ish. Overcooking will ruin it.

Has it been frozen?
 
I marinade the T.L. and then wrap in prociutto then cook her up. Where i live there are mostly blacktails (Small), The big mulies are a little farther out. Prociutto takes less time to get crispy and so my T.L. doesn't get overdone.
 
I will have to second slicing it in 3/4" thick pieces, dredging them in flour and frying in an olive oil till done. Those tenderloin chops are just too tasty of morsels to do anything else with... Serve with good ole' catsup...Mmmmm
 
What I use for loins and backstraps is a marinade, then throw them on the grill.

Here's the marinade I use.........it's excellent.

2/3 cup wine vinegar
1/2 cup catsup
4 Tbsp salad oil
4 Tbsp soy sauce
2 Tbsp worchestershire sauce
1 Tbsp dry mustard
1 tsp salt
1 tsp pepper
1 tsp garlic powder/grandules

marinate 1-2 days in refrigerator

cook on grill to preferred finish. I usually cook an inner loin 3-4 minutes on each side. A backstrap I will cook 7-10 minutes per side, depending on the thickness.

For best results leave the piece of meat whole until after the cooking process is completed.
 
I'd like you to send it to me!!!!! Because I know you wont like it. So what ever you do, don't cut up into 3/4" slices and cook it in olive oil. just send it to me I'll see to it that it is disposed of properly!!!!!!!!!!!!!
 
Whats wrong with 3/4" cubes wraped in bacon grilled until medium rare?

thanks for the suggestions everybody....

and i am going to enjoy it, if not my cat loves smoked/grilled meat, hence the name "Smoke"...lol
