My name is Steve, just getting into smoking with the Brinkmann Sportsman Charcoal Smoker.  Apparently it also goes by ECB and seeing I picked it up brand new on craigslist for $20 I can understand the acronym.  Anyways, I have cured the smoker per directions and added some holes for ventilation in the charcoal pan.  I read that thermometer probes are a must have for smoking so I will get some of those and not worry about changing the stock temp gauge.  I have seen the mods for this smoker but I'm not really interested in changing the cosmetic appearance, I might add a grate to keep the charcoal seperated from the ashes.

I would like to become comfortable enough with this smoker to use it for cooking when I go camping next summer.  Any information or comments that will help me with smoking are appreciated.  If there is a thread someone could show me that lists the common tools needed to start smoking that would be great.

Thanks,

Steve
