I stumbled on this forum just a few days ago, and since it inspired me to gear up for some smoking I thought I would introduce myself and participate.
I'm Nate, from the Modesto area of Northern California.
When it comes to food, I'm always looking for another experiment or project so I have a pretty wide variety of experiences when it comes to cooking meats. I enjoy cooking with gas, wood or coals in anything from a smoky joe to cinder block and rebar pig pit. I decided that smoking will be my next adventure, so I just bought myself some birthday presents.
I have a MES-30 and an A-MAZE-N-PELLET smoker both on their way. I also was browsing craigslist today and made what seems to be a good deal on a Globe slicer. I'll probably spend the afternoon cleaning it up and looking for places that it needs attention.
I stopped by my favorite pig ranch for a belly this morning and intend to get a dry cure started this weekend, I'll find something to smoke during the week for some trial runs.
Anyway, glad to be here and look forward to more great ideas.
