Rice, beans and taters in any combo or alone, then adddd a protein.
Cook these items, portion and freeze.
Defrost, add fresh veggies and a sauce or seasoning.
Mexican, Asian, Cajun, Italian... Anything.

Salads, add protein.

Pasta.

There are thousands of really tasty casseroles.

Hearty soups and stews.

Simple meat, potatoes, and veggies are easy to make at home and relatively low cost depending on the meat choice.
We do beef strip loin or top sirloin and chicken breast or thigh. Pork is usually ground into sausage. We buy pork chops on sale at local grocer.
Wife cooks salmon pieces a lot. Get a bag of frozen sockeye.

I you use a computer, start making a list of meals/ideas. That's how I keep from forgetting about stuff, and I add to it when I see stuff I'm interested in (like Chop's meal bowls...I make taco salads and other salads with proteins, but this reminded me of rice, couscous, beans, etc.). I keep 40-50 meal ideas on my list and change out some of them for summer/winter. Lighter colder stuff for summer; soups, stews and casseroles for winter.

There are recipe programs as well. If you are not a computer user, your phone can keep notes and documents (if its a smart phone), otherwise you can go old school with recipe cards. The internet is my main tool. When I want to make something I see out there somewhere, I usually look at the base method of the cook, then scan through the ingredients and ideas of a couple dozen recipes and create my own hybrid using the stuff that looks good/best to me. I almost never just make a recipe as written unless its one I have refined myself.

If you eat pasta, there are many things you can throw at pasta...hot and cold.

Trying to save money...shop the best sales on proteins, etc.. Never just go and buy full price. I cant remember the last time I bought a protein at full price. I buy when it's on sale and vac seal and freeze. I might pay "full price" at Sam's Club, but that's like buying on sale at most grocery stores.
