Hello everyone. I'm NewEnglandSmoke, Dave Collins, living in Gales Ferry, CT, two miles upriver from Naval Submarine Base New London, home of the largest concentration of submarines in the country. I'm a 28 1/2 year active duty Master Chief currently serving as Chief of the Boat on USS ANNAPOLIS (SSN 760).
I've been grilling for over twenty years, and just got into smoking this year. Like all my hobbies I hate being an amateur long, so I've been going to all the forums like this one to get tips and tricks, but this one seems to have the best advice, so I became a member. I've got a CharBroil horizontal offset smoker from Home Depot, don't know if that's good or bad, but it's doing the trick so far. I've added a couple extra after market thermometers to get a better reading and just fired up a Maverick remote thermometer, seems to be working pretty well. I've tried a few Boston Butts (Go Bruins!) and several different racks of ribs with varying degrees of satisfaction, now that I'm mastering watching the temperature instead of the clock, I'm doing much better.
Going to sea very soon, but can't wait to get back this spring to try my first brisket! Wish me luck and I'm happy to be aboard this forum! Dave
