Hi, my name's Chuck. I live in the Piney Woods of East Texas, I love to make BBQ, but I don't eat as much smoked meat as I used to because it has gotten to giving me severe heartburn, so i just smoke it lightly. I Have several smokers from a countertop model to a pro smoker. I just found this forum and I can't wait to dig in and discover what y'all are doing with this fascinating pastime. I also like to make my own beer.
