Hello from Tampa,  Just bought a barely used ECB smoker, found this site, never smoked before, does the cooking is the same on the grill at water pan and the one above, not quite sure if there's difference in cooking times or temps, welcome all advice, can't wait to start SMOKIN,   Thanks Tony B
