Hey everyone. Just new here and excited to pickup all the tips I can from all of you. I live in Farmington UT. I have been smoking since I was a kid with my dad. We spent the summers on the Oregon coast and smoked a lot of salmon. I have been back yard smoking for years. I am mostly self taught by trial and error. I have mostly cooked on a old wood smoker I built myself. For Christmas my girlfriend bought me a masterbuilt electric smoker. I have not mastered it as of yet and am almost ready to go back to my wood smoker.

Don't give up on that MES just yet, there are a lot of users here who get great results and they also love helping each other out with it. Stick around and I'm sure you will learn to love it.

Something you might want to look into is an AMNPS, which is an A-MAZE-N Pellet Smoke generator, that and the MES is a match made in heaven!

The link I posted shows it and it burns different flavored wood pellets for smoke. It can provide 10 hours of perfect smoke. The chip tray in the MES needs to be refilled about every 45 mins or so. It really saves the hassle of always having to babysit the smoker and keep adding chips. It can also be used in the MES for cold smoking. 
 
Shawn, welcome to SMF.  I'm a bit south of you in Midvale.  This site has helped a lot folks and there are  plenty of folks here to help you master the MES.

Hello and welcome to SMF! I have an MES40 and can smoke anything I want with outstanding results. Get yourself a good thermometer and check the cabinet temp with the actual display set temp. Most are off and then you'll be able to adjust the temp accordingly. Also paired with the AMNPS, you have a good low and slow smoker as well as a cold smoker.
