My name is Ed, I live in the mountains of Pa. all of this is new to me. I'm a volunteer firefighter and EMT, spend most of my time outdoors. (fishing, hunting, kayaking and camping) I have 4 in one Smoke Hollow smoker. I have been reading the post for the last week and smoked cheese today as my first test. Thanks to your "Cold Smoke" post it turned out great. I use hickory and cherry wood since it grows around here like weeds. Would like to sign up for the five day e-course. You have a-lot of information on your site.
