Hello All,
I just picked up the new Pit Boss PB1100 from Lowe’s last weekend. I’ve never really seriously smoked anything before that wasn’t on a Weber kettle, but said, “Screw it!” And went for broke. I picked a 12lb Prime brisket, watched some YouTube vids, trimmed it, put a salt and pepper rub on it and put it on the smoker. I had a little trouble at first with some wild temperature swings, and a minor “explosion” , but got it mostly under control. In the end I determined my temps were about 30+ degrees above what I was hoping so it finished up a few hours early, but surprisingly it came out super tender and tasty, if only a little bit dry. Overall, for my first brisket ever and my first cook ever on a brand new pit, I’m calling it a success.

I’m hoping to connect with some other Pellet Smokers and good folks in general.

Welcome, from another SE Texas fella. You should be proud of that 1st brisket. I think my first brisket got turned into work boots! Now I know why dogs kept following me around. LOL.
