Hi there from down south Louisiana near New Orleans. Just getting into the smoking. I have been cooking most of my life never smoked/grilled much. Looking forward to it with all the info available here thanks in advance. Purchased MES 40 and I am looking forward to making smoked sausage and bacon. Seems to be a great community here on this forum I am ready to start with some chickens this week and hopefully move up from there.
