I have been lurking for a few days and love the site and the info.  I figured  "jump in - the water looks fine".

I have been fisherman and hunter most of my life and I believe in “eat what you kill".  Also I really like the taste of fish and wild game.  I grew up in Monatna and lived in Alaska for several years.  Now I live in Redmond, WA but I still manage at least one trip to Alaska a year to fill the freezer.   Smoking salmon and other fish is almost a religion up there.  I have a Little Chief smoker that is 30 years old and has easily smoked more that 1000 lbs of fish.  I was bitten by the sausage making bug about two years ago and I think it could be fatal.  I am constantly looking for new recipes and ways to expand and improve my sausage making habit.  Needless to say time has come to significantly upgrade my smoker.  Online searching lead me here and I think I am in heaven.

I am in the process of building a smoker and will be asking a few questions on the smoke house forum.  I am planning on participating and learning all I can about smoking food.

Welcome to SMF. Glad you joined us. Here are a couple of books that I like to use when making sausage. Lots of great info.
